Chocolate Banana Bread Chocolate Banana Bread

    Prep: 15 min - Total: 1 hr 10 min

2 squares BAKER'S Unsweetened Baking Chocolate
    1-1/4 cups flour
    1 tsp. baking soda
    1/2 tsp. salt
    2 eggs
3/4 cup firmly packed brown sugar
    3/4 cup buttermilk
    1/2 cup oil
1 fully ripe banana, mashed (about 1/2 cup)
2-1/2 cups POST SELECTS BANANA NUT CRUNCH Cereal, divided
    1 tsp. oil

PLACE chocolate in microwavable bowl. Microwave on HIGH 1 to 2 minutes or until almost melted, stirring after 1 minute. Stir until chocolate is completely melted; set aside.

MIX flour, baking soda and salt in large bowl. Beat eggs in medium bowl; stir in melted chocolate, sugar, buttermilk, 1/2 cup oil and banana. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in 2 cups of the cereal. Spoon batter into greased 9x5-inch loaf pan.

CRUSH remaining 1/2 cup cereal in small bowl. Drizzle with 1 tsp. oil; stir until well blended. Sprinkle evenly over batter.

BAKE at 350°F for 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.

    Makes 1 loaf

Great Substitute: Substitute 1 scant tablespoon white vinegar or lemon juice plus enough milk to measure 3/4 cup for the buttermilk. Stir milk mixture and let stand for 5 minutes before using.
