Citrus Blueberry Muffins Prep Time: 15 min 1-1/3 cups flour 1/2 cup sugar 1 Tbsp. CALUMET Baking Powder 1/4 tsp. salt 1 egg 1 cup milk 1/3 cup butter or margarine, melted 1-1/2 tsp. grated orange peel 1-1/2 cups POST SELECTS BLUEBERRY MORNING Cereal MIX flour, sugar, baking powder and salt in large bowl. Beat egg in medium bowl; stir in milk, butter and orange peel. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal. SPOON batter into greased or paper-lined muffin pan, filling each cup 2/3 full. BAKE at 400°F for 20 minutes or until golden brown. Serve warm. Makes 12 servings Variation : For miniature muffins, prepare batter as directed; spoon into miniature muffin pans sprayed with no stick cooking spray, filling each cup 2/3 full. Bake at 400°F for 15 minutes or until golden brown.
