Hush Puppies


1 1/4 cups ALBERS® Yellow or White Corn Meal
1/2 cup finely chopped onion
1/4 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne pepper (optional)
3/4 cup NESTLÉ® CARNATION® Evaporated Milk
1 large egg, lightly beaten
1 tablespoon lemon juice
Vegetable oil



COMBINE corn meal, onion, flour, salt, baking soda, black pepper and cayenne
pepper in medium bowl. Combine evaporated milk, egg and lemon juice in small
bowl; add to corn meal mixture. Mix just until blended.

ADD vegetable oil to 2-inch depth in electric skillet or large skillet;
heat to 350°F.

DROP batter by rounded tablespoon into hot oil; turn to brown evenly. Cook,
turning frequently, for about 3 minutes or until golden brown. Remove with
slotted spoon; drain. Serve immediately.

FOR CHEESY HUSH PUPPIES:
ADD 1 cup (4 ounces) shredded sharp cheddar cheese to batter; mix well.
