Harvest Apple Cake
2 cups sugar
3/4 cup oil
2 teaspoons vanilla
2 cups all-purpose flour
2 teaspoons cinnamon
1 1/2 teaspoons baking soda
1/4 teaspoon salt
4 cups peeled, chopped tart apple
1 cup Chopped Diamond Walnuts
Heat oven to 350 degrees F.
Grease a 13x9 inch pan. Combine eggs, sugar, oil and vanilla;
beat until light and fluffy. Combine flour, cinnamon, baking
soda and salt. Add to oil mixture; blend well. Stir in apples
and walnuts. Spread in greased pan.
Bake at 350 degrees F for 40 to 45 minutes or until toothpick
inserted in center comes out clean. Cool in pan.
Makes 16 servings
NOTE: Serve with vanilla ice cream, if desired.
