1 cup flour
2 tablespoons cornstarch
1/2 cup unsifted confectioners sugar
1 cup butter or margarine, softened
1 1/2 cups (about) Baker's Angel Flake Coconut
Mix flour with cornstarch and sugar in a bowl. Blend in
butter to form a soft dough. Cover and chill, if necessary,
until dough is firm enough to handle. Shape into small balls,
about 3/4 inch in diameter. Roll in coconut and place on
ungreased baking sheets, about 1 1/2 inches apart. Flatten with
lightly floured fork, if desired. Bake at 300 F for 20 to 25
minutes, or until lightly browned.
Makes about 3 dozen
Almond Melting Moments: Prepare Melting Moments as directed,
adding 2 teaspoons almond extract with the butter.
