4 packages (8 ounces each) mascarpone or cream cheese,
room temperature
1 cup plus 2 teaspoons sugar, divided
1/2 cup light cream
1 teaspoon McCormick Brandy Extract, divided
1/2 teaspoon McCormick Pure Orange Extract
1/2 teaspoon McCormick Pure Vanilla Extract
1 1/2 cups cold strong black coffee
48 ladyfingers
8 ounces milk chocolate, grated

Place mascarpone cheese in large mixer bowl and beat with
electric mixer until light and fluffy.

Add 1 cup sugar, cream, 1/2 teaspoon brandy extract, orange
extract, and vanilla, beating at high speed 1 minute. Set aside.

Place coffee, remaining 2 teaspoons sugar, and remaining 1/2
teaspoon brandy extract in 2-cup glass measure and stir until
sugar has dissolved. Set aside.

Break ladyfingers into thirds and arrange half of pieces in
bottom of 12 dessert dishes. Drizzle half of reserved coffee
mixture evenly over ladyfingers and spoon half of cheese mixture
on top. Sprinkle with half of grated chocolate.

Repeat with second layer of ladyfingers, coffee mixture, cheese
mixture, and chocolate, ending with chocolate.

Cover and refrigerate at least 2 hours.

Makes 12 servings, 1 cup each
