1/2 cup sour cream
2 tablespoons Parmesan cheese
1/4 teaspoon black pepper
1 (3.5-ounce) package HORMEL® BLACK LABEL® fully cooked bacon, crumbled
2 tablespoons sliced green onion
1/4 cup butter or margarine
3 English muffins, split, toasted, and buttered
In bowl, beat together eggs, sour cream, Parmesan cheese, and
black pepper. Stir in bacon and green onion.
In large skillet, melt butter. Add egg mixture. Cook, without
stirring, until mixture begins to set on bottom. Draw a spatula
across bottom to form large curds. Continue cooking until eggs
are thickened but still moist; do not stir constantly.
Serve over toasted English muffin halves.
Makes 6 servings.
