Beefy Bell Peppers
2 large bell peppers, cut in half lengthwise; remove seeds and membrane
1 pound lean ground beef
1 small yellow onion, chopped
1/2 cup plain couscous
1 (14.5-ounce) jar NOT-SO-SLOPPY-JOE® Sloppy Joe Sauce
1/4 cup water
1/2 cup shredded Parmesan cheese, divided
1/2 cup raisins
1/4 cup sliced natural almonds, toasted
Preheat oven to 375°F. Immerse peppers into boiling water for
3 minutes; drain and set aside. In large skillet, cook ground
beef and onion; drain. Stir in next three ingredients and 1/4
cup cheese; cook 5 to 7 minutes. Add raisins.
Fill peppers with meat mixture and place in baking dish along
with any remaining meat mixture. Bake 15 minutes or until heated
through. Sprinkle with remaining cheese and almonds.
Serve with tomato sauce.
