1 pound uncooked linguini noodles
1/2 cup CARAPELLI® mild olive oil
Zest from 1 large lemon
Juice from 2 large lemons
1/2 cup chopped green onion
1/4 cup chopped fresh flat leaf parsley
Salt and fresh ground black pepper
Parmesan cheese, to taste
Cook linguini in boiling salted water until al dente; drain well.
Meanwhile, in bowl, combine olive oil, lemon zest, lemon juice,
green onion and parsley. Add pasta; toss well. Season to taste
with salt and pepper. Toss in Parmesan cheese to taste.
Serve warm or chilled.
