Salsa Chicken

1 pound boneless, skinless chicken breasts, cut in strips
2 tablespoons oil
1 pkg. (1.25 oz.) McCormick Taco Seasoning Mix
1 can (14 1/2 oz.) diced tomatoes
1/3 cup apricot or peach preserves

Empty Taco Seasoning on a plate or into a plastic bag. Add
chicken strips and toss to coat.

In a large skillet, heat oil over medium heat. Add chicken and
saute 5-7 minutes or until done.

Stir in tomato and preserves. Cover and simmer 10 minutes.

Recommended side dishes: Cooked white rice, yellow squash
