    Almond Chicken Salad Almond Chicken Salad

    Almond Chicken Salad makes a sensational lunch or light supper. Golden raisins or dried apricots are an added treat.

    Prep: 10 minutes

    2 cups chopped, cooked chicken
    1 cup sliced celery
    1/2 cup snipped dried apricots or golden raisins
    1/3 cup slivered almonds, toasted
    1/2 cup mayonnaise
    2 tablespoons frozen orange juice concentrate, thawed
    1/2 teaspoon McCormick® California Style Blend Garlic Powder
    1/4 teaspoon McCormick® Ground Black Pepper
    1/4 teaspoon McCormick® Ground Ginger
    lettuce
    tomato


    1. In large bowl, stir together chicken, celery, apricots and almonds.

    2. Add remaining ingredients. Mix well. Refrigerate.

    3. Line 4 serving plates with lettuce leaves and tomato slices. Top with chicken salad.

    *Also great as sandwich filling in pita bread, croissants or crusty rolls.

    Makes 4 servings
