Carrot-Raisin Salad 3 large carrots, shredded (2 1/2 cups) 1 medium stalk celery, sliced (1/2 cup) 1/2 cup raisins 1/2 cup mayonnaise or salad dressing 1 teaspoon lemon juice Salad greens, if desired Mix all ingredients except salad greens. Serve on salad greens. Cover and refrigerate any remaining salad.
