Old-World Potato Salad

Carrot slices, green pepper and sour cream add a touch of
difference to this creamy potato salad.

Prep: 30 min Chill: 3 hrs

Dressing Ingredients:

1 1/2 cups LAND O LAKES® Sour Cream
1 tablespoon sugar
2 tablespoons vinegar
1 teaspoon salt
2 teaspoons prepared yellow mustard
1/4 teaspoon coarsely ground pepper

Salad Ingredients:

2 pounds (3 to 5 medium) russet potatoes, cooked, peeled, sliced
3/4 cup sliced 1/4-inch carrots
1/2 cup chopped green bell pepper

Stir together all dressing ingredients in medium bowl.

Combine potatoes, carrots and green pepper in large bowl. Add
dressing; stir to coat well.

Cover; refrigerate at least 3 hours.

Makes 6 (1-cup) servings
