Orange-Avocado Salad

This salad features a yummy combination of fruits, veggies
and a citrus dressing.

Prep: 20 min

Orange Vinaigrette (below)
3 oranges, peeled and sliced
2 avocados, peeled, pitted and sliced
6 thin slices red onion, separated into rings
Salad greens


1. Make Orange Dressing.

2. Arrange oranges, avocados and onion on salad greens on
6 salad plates. Serve with dressing.

Makes 6 servings

Orange Vinaigrette

1/3 cup vegetable oil
1 teaspoon grated orange peel
1/4 cup orange juice
2 tablespoons sugar
2 tablespoons lemon juice
1/2 teaspoon ground mustard
1/4 teaspoon salt


Shake all ingredients in tightly covered container.

Success Hint: When an avocado is cut and its flesh exposed to
air, it discolors quickly. So add avocados at the last minute,
or brush with lemon or lime juice to minimize discoloration.
