Easy Parmesan Potatoes

These savory potatoes are flavored with Parmesan cheese and
topped with red pepper and parsley.

Prep: 10 min Bake: 50 min

1/2 cup LAND O LAKES® Butter, melted
1 teaspoon salt
1/2 teapoon pepper
6 medium (6 cups) baking potatoes, washed, unpeeled, cut into 1/8-inch slices
1/4 cup grated Parmesan cheese
1/4 cup finely chopped red pepper
2 tablespoons chopped fresh parsley


Heat oven to 350 F. Combine, butter, salt and pepper in large
bowl. Add potatoes; toss to coat.

Layer 1/2 of potatoes in ungreased 13x9-inch baking pan;
sprinkle with 1/2 Parmesan cheese. Layer with remaining
potatoes.

Cover with aluminum foil. Bake for 30 minutes. Uncover;
sprinkle with remaining cheese. Continue baking, uncovered,
for 20 to 30 minutes or until potatoes are crisply tender.

Sprinkle with red pepper and parsley before serving.
