Black Bean Soup

1 cup sliced celery
1 cup chopped onion
2 teaspoons minced garlic
1 tablespoon CARAPELLI® light olive oil
2 (15-ounce) cans black beans, drained
1 (28-ounce) can Italian-style tomatoes in puree
1 (14-ounce) can chicken broth
1 teaspoon crushed red pepper flakes
1/2 teaspoon coarsely ground black pepper
1 cup diced HORMEL® pepperoni

In large saucepan, sauté celery, onion, and garlic in olive oil
until tender. Add remaining ingredients except pepperoni. Bring
to a boil; reduce heat. Simmer, stirring occasionally, 25 to 30
minutes. Stir in pepperoni.

Makes 6 servings.
