    Country Potato Soup

    4 cups diced potatoes
    1 onion, chopped
    1 cup chopped celery
    1 carrot, sliced
    1 (2-ounce) jar HORMEL® real bacon pieces
    4 tablespoons butter or margarine
    1 cup chicken broth
    2 cups milk
    1/4 teaspoon salt
    1/8 teaspoon pepper
    Finely chopped parsley


    In 3-quart microwave-safe casserole, combine potatoes, onion, celery, carrot, bacon pieces, butter, and chicken broth. Cover loosely with plastic wrap. Cook at HIGH 13 to 15 minutes or until potatoes are tender; stirring once. Stir in milk, salt, and pepper. Recover. Cook at HIGH 8 minutes or until heated through. Sprinkle parsley over top.

    Makes 10 (1 cup each) servings
